Fresh Pea Soup
One of my favorites for spring and quick! I love it because it’s lighter than many winter soups but still warming for this chilly days in New England April.
Saute one big onion in olive oil with 5 or 6 cloves of garlic. Pour in one bag of frozen peas and saute until the peas are soft. Put it all into your blender with 1 can of coconut milk and one box of veggie or chicken broth. Salt to taste! Serve with a dollop of yogurt or sour cream or mince some dill or parsley to decorate! You could substitute a pound or so of spinach and have another pretty bright green soup to bring in the spring! #eatsoup #frozenpeas #naturopathic #thriver
