Our daughter Sophia and husband Alex blessed our family with a beautiful daughter this summer. We are all over the moon. One of the ways we lend our love and support is through preparing and sharing favorite foods and packing their freezer with easy to prep meals. But treats also help! These lactation cookies are a real hit. With protein rich almond flour, B-vitamin- laden brewer’s yeast, healthy oils in coconut oil and the nutritional value of flax seeds, these little treats fit in with an overall healthy diet to help promote milk production. Of course, nursing and pumping as needed, resting and staying hydrated also matter!

I double or triple this recipe, as the cookies fly off the plate, for those who are lactating and their friends! These cookies freeze well, so make an extra batch! I work to use organic ingredients and choose gluten free option for say the chocolate chips.

1/4 cup ground flax seeds

one egg

1/2 cup water or milk of choice

6 tablespoons melted coconut oil or butter

 A half to 3/4  cup coconut sugar depending on how sweet you prefer

1/4 cup brewer’s yeast

1 teaspoon vanilla

1/2 teaspoon baking soda

1/4 teaspoon sea salt

2 cups almond flour

1/2 oats

2/3 cup dark chocolate chips

Mix the oil or butter with the sugar and then the rest of the ingredients. Scoop on a teaspoon a rounded mound and place a few inches apart on parchment paper on a cookie sheet. Bake at 350 for 8 -10 minutes or so. Watch them carefully to prevent burning! Enjoy.
